Expect crisp citrus, green apple and a touch of stone fruit, all underpinned by a fine, chalky backbone and a beautifully persistent mousse. Theres a creamy, biscuity depth from time on lees, but its the elegance and freshness that really shine. The Wendling (named in honour of co owner Wendy) Blanc de Blancs 2018 is a brilliant example of what
