The design has weight reduction holes which help with release, and allow for pushing the cut cheese off of the blade. The starting stock for our cheese knife is 1 16", which is ground to a very sharp edge and heat treated in a 6 stage process to allow for durability. This edge geometry and heat treatment allow the knife to also serve a variety of purposes
