This sour Saison has been fermented and aged in Bourbon barrels in our oak library for a year before being Foudre aged on top of 200kgs of juicy Somerset Victoria plums and 300kgs of tart local Merryweather damsons

Moderne Dansk was inspired by one of our favourite wineries in the world — Frederiksdal Kirsebaervin in Harpelunde

Vanilla and sweet oak carry through into the finish

This is finished off with a long bone-dry aftertaste

The wort is cooled and spontaneously inoculated in our koelship overnight before fermenting and ageing in French oak casks

Pomona Island If I Only Had Sense Enough Red Wine This sour Saison has beenThis is one of 13 releases of barrel aged Imperial Russian Stout. One brew, split into 13 different casks and left to develop and absorb the character and flavour embedded in the wood. This one has been resting in a 5 year Italian Sweet Vermouth barrel and has received a profile of vanilla and sweet dark fruits with a herbal background. This will develop over time but this is excellent to drink right now.
