Nous Encore 2023 Roussillon Farmed biodynamically on Saumur's tuffeauSbastien Morin makes wine in the Beaujolais under the Winecraft name, working the way a small handful there now do: low intervention, long macerations, slow pressing. Ma Lam of La Ma Wines works alongside him on much the same principles. Nous Encore is Gamay in his brighter register, crunchy red fruit with a peppery lift and soft tannin, and enough acidity underneath to keep the whole thing moving. There is very little standing between the vineyard
